The best method is a high-heat cast-iron sear, finished in a 400°F–450°F oven for 2–4 minutes (or just on the stove) to reach 130°F–135°F internal temp for medium-rare. Sear for 2-3 minutes per side, basting with butter, garlic, and herbs, then rest for 5–10 minutes
